Description

Old Cuban works best when it is treated as more than a list of ingredients. Aged rum, lime juice, sugar syrup and mint give it a flavour story that is easy to understand but not boring. The best version has a clear beginning, middle and finish: aroma first, then sweetness or fruit, then enough acidity or bitterness to clean up the sip.

That makes it useful for home mixing because it feels generous without needing complicated technique.

Ingredients

  • 45 ml Aged Rum
  • 20 ml lime juice (fresh)
  • 20 ml Simple Syrup
  • 6 mint leafs
  • 2 dashes Angostura Bitters
  • Sparkling Wine to top
  • 1 mint leaf (sprig, optional)

Instructions

  1. Add aged rum, lime juice, simple syrup, mint leaves, and bitters to a shaker with ice.
  2. Shake well until chilled.
  3. Fine strain into a chilled coupe glass.
  4. Top with sparkling wine and garnish with a mint sprig if using.
