Description

Bellini should feel intentional from the first sip, not like a random mixture poured over ice. The bubbles are not just there for decoration: they lift the aroma, stretch the sweetness and make Prosecco and Peach puree feel lighter in the mouth. That is why the drink lands so well as an aperitif, a brunch serve or a first drink before food.

Keep the build cold and avoid over-stirring after the fizz goes in, because the sparkle is part of the flavour.

Ingredients

  • 100 ml Prosecco
  • 50 ml Peach Puree
  • 1 piece Peach Slice (for garnish)

Instructions

  1. Pour peach puree into a chilled champagne flute.
  2. Top slowly with prosecco.
  3. Stir gently if needed.
  4. Garnish with a peach slice.
