A dry gin highball with lime and soda. Crisp, unsweetened, refreshing and sharper than a Collins.

Description

The Gin Rickey is a masterclass in restraint. There is no syrup to hide behind, just gin, fresh lime and soda water, which means the drink is only as good as its balance and its chill. It should be dry, fizzy and bracingly fresh.

Born in Washington, D.C. in the late nineteenth century, the Rickey became famous because it was lighter than many sweeter long drinks. It is perfect when you want the botanical snap of gin with a clean citrus finish and almost no fuss.

Ingredients

  • 60 ml Gin
  • 15 ml lime juice
  • Soda Water to top

Instructions

  1. Fill a highball glass with ice.
  2. Add gin and fresh lime juice.
  3. Top with soda water and stir gently.
  4. Garnish with a lime wheel.

300–410 ml Tall, straight-sided, narrower than a highball.

Best for: Mojito, Tom Collins, Paloma, Gin Fizz, long refreshing cocktails.
