Description

Air Mail should feel intentional from the first sip, not like a random mixture poured over ice. The bubbles are not just there for decoration: they lift the aroma, stretch the sweetness and make Aged Rum, Lime Juice, Honey Syrup and Champagne feel lighter in the mouth. That is why the drink lands so well as an aperitif, a brunch serve or a first drink before food.

Keep the build cold and avoid over-stirring after the fizz goes in, because the sparkle is part of the flavour.

Ingredients

  • 45 ml Aged Rum
  • 15 ml lime juice
  • 15 ml Honey syrup
  • Champagne to top
  • 1 piece Lime Twist (for garnish)

Instructions

  1. Shake rum, lime juice, and honey syrup with ice.
  2. Strain into a flute glass.
  3. Top with Champagne and garnish with a lime twist.
