A tangy bourbon sour with tamarind, lemon, egg white and aromatic bitters.

Description

Tamarind Whisky Sour uses tamarind for its naturally sweet-sour depth rather than treating it as just another syrup flavour. Bourbon gives vanilla and oak, lemon adds high citrus acidity and tamarind contributes darker, almost date-like tang.

Egg white rounds the sharper acids and Angostura links the fruit to the whiskey’s spice. The finish should be tart, warm and slightly savoury.

Ingredients

  • 50 ml Bourbon
  • 25 ml lemon juice
  • 15 ml Tamarind syrup
  • 20 ml Egg White
  • 2 dashes Angostura Bitters
  • 1 piece Lemon peel (for garnish)
  • Ice

Instructions

  1. Add bourbon, lemon juice, tamarind syrup and egg white to a shaker without ice.
  2. Dry shake for 10 seconds.
  3. Add ice and shake hard for another 12 to 15 seconds.
  4. Double strain over a large cube in a rocks glass.
  5. Add two drops or dashes of Angostura to the foam and garnish with lemon peel.
