Description

The South Pacific is a tiki-style drink built around the easy glamour of rum, pineapple and passion fruit. Dark rum gives it weight, pineapple brings tropical brightness and passion fruit adds tart perfume that makes the drink feel more exotic than a simple rum-and-juice mix.

It belongs to the mid-century world of Polynesian-inspired bars: colourful glassware, big fruit flavours and escapist energy. Keep it cold, keep the citrus lively and it becomes a relaxed tropical serve with enough depth to avoid tasting flat.

Ingredients

  • 45 ml Dark rum
  • 60 ml Pineapple juice
  • 20 ml Passionfruit Syrup
  • 15 ml lime juice
  • 1 wedge Pineapple Wedge (for garnish)
  • 1 cherry (for garnish)

Instructions

  1. Shake all ingredients with ice.
  2. Strain into a hurricane glass filled with crushed ice.
  3. Garnish with a pineapple wedge and cherry.
