A smoky mezcal-and-rum sour with fresh pineapple, roasted pineapple syrup, lime and foam.

Description

Smoked Pineapple Sour layers smoke rather than relying on a theatrical smoke cloud. Mezcal provides the main smoky note, dark rum adds molasses depth and pineapple juice gives fruit that naturally works with both spirits.

Roasted pineapple syrup reinforces caramelised fruit while lime and egg white keep the drink bright and silky. It should taste like grilled pineapple beside a fire, not barbecue sauce.

Ingredients

  • 40 ml Mezcal
  • 10 ml Dark rum
  • 30 ml Pineapple juice
  • 20 ml lime juice
  • 10 ml Roasted pineapple syrup
  • 15 ml Egg White
  • 1 piece Pineapple leaf (for garnish)
  • Ice

Instructions

  1. Add mezcal, rum, pineapple juice, lime juice, roasted pineapple syrup and egg white to a shaker without ice.
  2. Dry shake for 10 seconds.
  3. Add ice and shake very hard for 15 seconds.
  4. Double strain over a large cube in a rocks glass.
  5. Garnish with a pineapple leaf or dehydrated pineapple.
