Picante de la Casa

Description

The charm of Picante de la Casa is in the contrast: familiar flavours, but with enough shape to make it memorable. Tequila blanco, lime juice, agave syrup and coriander give it a flavour story that is easy to understand but not boring. The best version has a clear beginning, middle and finish: aroma first, then sweetness or fruit, then enough acidity or bitterness to clean up the sip.

That makes it useful for home mixing because it feels generous without needing complicated technique.

Ingredients

  • 50 ml Tequila (blanco)
  • 25 ml lime juice (fresh)
  • 15 ml Agave syrup
  • 4 leaves Fresh Coriander
  • 2 pieces Fresh Chilli (slices)

Instructions

  1. Lightly muddle the chilli and coriander in a shaker.
  2. Add tequila, lime juice, agave syrup, and ice.
  3. Shake hard until cold.
  4. Fine strain into a rocks glass over fresh ice and garnish if desired.
