Description

The Clover Club is a pre-Prohibition cocktail that originated in Philadelphia. It was named after a gentlemens club and became popular for its unique combination of gin, raspberry syrup, lemon juice, and egg white.

This cocktail has seen a resurgence in recent years, appreciated for its balance of tartness, sweetness, and creamy texture.

Ingredients

  • 60 ml Gin
  • 15 ml Raspberry syrup
  • 15 ml lemon juice
  • 1 piece Egg White
  • 3 pieces Raspberry (for garnish)

Instructions

  1. Shake all ingredients without ice to emulsify the egg white.
  2. Add ice and shake again until well chilled.
  3. Strain into a coupe glass.
  4. Garnish with fresh raspberries.
