Description

Tropical Sgroppino keeps the playful texture of the Venetian original while moving from lemon toward mango and passion fruit. Mango sorbet provides the frozen body, passion fruit supplies enough acidity and perfume to stop it tasting heavy, and vodka adds clean strength.

Prosecco is folded in last so the drink stays spoonably light and lively rather than becoming a flat smoothie.

Ingredients

  • 20 ml Vodka
  • 60 ml Mango Sorbet (slightly softened)
  • 20 ml Passionfruit Puree
  • Prosecco to top

Equipment needed

Bar Spoon – Use for gentle integration without losing carbonation. Bottle Opener – Useful for opening bottled sparkling mixers.

Instructions

  1. Spoon the slightly softened mango sorbet into a chilled bowl or small jug.
  2. Add vodka and passion fruit purée and whisk briefly until smooth but still frozen.
  3. Fold in the prosecco in two additions; do not aggressively stir out the bubbles.
  4. Pour or spoon into a chilled coupe or small flute and serve immediately.
