Description

Blended strawberry daiquiris can be disappointing when they taste like ice and syrup, but a good one is completely different. The Strawberry Daiquiri should feel like ripe summer fruit sharpened with lime, with white rum giving it just enough backbone to stop it becoming a smoothie in a cocktail glass.

What makes this version work is contrast. Strawberry puree brings perfume and colour, lime keeps the drink bright, and a small measure of syrup rounds the edges without burying the fruit. Serve it properly cold, almost slushy, and it becomes the kind of cocktail people ask for again because it is simple, sunny and instantly understandable.

Ingredients

  • 50 ml White rum
  • 25 ml lime juice
  • 40 ml Strawberry Puree
  • 15 ml Simple Syrup

Instructions

Blend: Add all ingredients to a blender with ice and blend until smooth.

Serve: Pour into a chilled coupe or frozen drink glass.

Garnish: Finish neatly and serve.
