Then the pickle brine comes in with salt, tang and a little bit of mischief.

Ingredients

  • 50 ml White rum
  • 20 ml lime juice
  • 15 ml Pickle brine
  • 10 ml Sugar syrup
  • 8 mint leafs
  • Soda Water to top
  • 1 mint sprig
  • 1 lime wedge

Instructions

  1. Gently muddle mint with lime juice and sugar syrup in a highball glass.
  2. Add white rum, pickle brine and fresh ice.
  3. Top with soda water and stir gently.
  4. Garnish with mint and a small pickle garnish.
