Description

Cloud Nine Collins earns its name from texture rather than excessive sweetness. Gin and lemon form a classic Collins base, elderflower adds floral fruit and a small amount of vanilla syrup gives a soft, rounded aroma.

Egg white creates a delicate cloud of foam while soda keeps the drink long and refreshing. The contrast between light texture and sharp citrus is the point.

Ingredients

  • 45 ml Gin
  • 15 ml Elderflower Liqueur
  • 20 ml lemon juice
  • 8 ml Vanilla syrup
  • 15 ml Egg White (or aquafaba)
  • Soda Water to top
  • 1 piece Lemon twist (for garnish)
  • Ice

Instructions

  1. Add gin, elderflower liqueur, lemon juice, vanilla syrup and egg white to a shaker without ice.
  2. Dry shake for 10 seconds, then add ice and shake again until very cold.
  3. Strain into an ice-filled Collins glass.
  4. Top slowly with soda water so the foam rises rather than collapses.
  5. Garnish with a long lemon twist.
