A dry, spicy highball with reposado tequila, mezcal, pineapple, lime, soda and a Tajín half-rim.

Description

Pineapple Tajin Highball uses ripe pineapple as the bridge between reposado tequila and a small measure of mezcal. Lime sharpens the fruit while soda turns the combination into a long, food-friendly drink.

Tajín belongs on only half the rim so the drinker can move between clean, smoky fruit and chilli-lime seasoning.

Ingredients

  • 40 ml Reposado tequila
  • 10 ml Mezcal
  • 60 ml Pineapple juice
  • 15 ml lime juice
  • Soda Water to top
  • Tajín Seasoning
  • 1 piece Pineapple leaf (for garnish)
  • Ice

Instructions

  1. Run a lime wedge around half the rim of a highball glass and coat that half with Tajín.
  2. Fill the glass with ice and add reposado tequila, mezcal, pineapple juice and lime juice.
  3. Stir briefly, then top with soda water.
  4. Stir once from the bottom and garnish with a pineapple leaf.
