Description

What it is: A modern gin-and-Campari sour softened by muddled fresh green grapes, lemon and sugar.

The story: Vincenzo Errico created the Enzoni at Match Bar in London in 2001. It is often described as sitting between a Negroni and a gin sour: Campari supplies the bitter spine while fresh grapes bring a soft, juicy sweetness.

Why it works: The grapes are more than decoration. Muddling them adds fresh fruit, texture and enough natural sweetness to round Campari’s bitterness without hiding it.

Ingredients

  • 5 pieces Green grapes (seedless)
  • 30 ml Gin
  • 30 ml Campari
  • 20 ml lemon juice (freshly squeezed)
  • 15 ml Sugar syrup
  • 2 pieces Green grapes

Instructions

  1. Place five seedless green grapes in a shaker and muddle until their juice is released.
  2. Add gin, Campari, fresh lemon juice and rich sugar syrup.
  3. Fill with ice and shake hard until thoroughly chilled.
  4. Fine strain into a lowball glass over fresh ice.
  5. Garnish with two fresh green grapes on a pick.

180–300 ml Short, wide, heavy-bottomed tumbler.

Best for: Old Fashioned, Negroni, Boulevardier, Whiskey Sour over ice, Rusty Nail.

Garnish: Great for orange twists, cherries, and large clear ice cubes.
