Description

The Dip Dab Collins is a sherbet-shop twist on the Tom Collins, and the fun is in the fizz. Gin gives it a clean botanical base, lemon brings the classic Collins sharpness, strawberry liqueur adds the sweet red-fruit note, and the sherbet-coated lollipop makes the drink feel like something you should probably have been warned about.

It is playful without losing the structure of a real long cocktail. The soda keeps it light, the citrus keeps it bright, and the strawberry-sherbet finish makes it memorable. This is one for parties, birthdays and anyone who still has a soft spot for corner-shop sweets.

Ingredients

  • 50 ml Gin
  • 25 ml lemon juice
  • 20 ml Sugar syrup
  • 20 ml Strawberry Liqueur (or muddled fresh strawberries)
  • Soda Water to top

Instructions

Crush the Dib Dab sherbet finely and use it to rim a tall Collins glass.

Fill the glass with ice.

In a shaker, combine gin, lemon juice, sugar syrup, and strawberry liqueur (or muddled strawberries).

Shake briefly to mix and chill.

Strain into the prepared glass over the ice.

Top with soda water and stir gently.

Garnish with a strawberry lolly resting in the glass or clipped to the rim.
