Description

A fusion of a Tom Collins and the classic Dip Dab lolly, made with strawberry gin, soda water, and a sherbet-coated lollipop stirrer.

Ingredients

• 50ml gin (classic London Dry or citrus-forward)
• 25ml fresh lemon juice
• 20ml sugar syrup
• 20ml strawberry liqueur (or muddled fresh strawberries)
• Soda water, to top
• Crushed Dib Dab sherbet, for garnish
• Strawberry lolly (or fresh strawberry), for decoration

Instructions

Crush the Dib Dab sherbet finely and use it to rim a tall Collins glass.

Fill the glass with ice.

In a shaker, combine gin, lemon juice, sugar syrup, and strawberry liqueur (or muddled strawberries).

Shake briefly to mix and chill.

Strain into the prepared glass over the ice.

Top with soda water and stir gently.

Garnish with a strawberry lolly resting in the glass or clipped to the rim.
