Description

Based on the timeless Tom Collins, the Raspberry Collins takes the classic gin, lemon, sugar, and soda mix and adds juicy raspberries for extra flavour and colour. The result is a vibrant, bubbly pink drink that balances sweet, sour, and botanical notes with refreshing ease. Served in a tall glass with ice and fresh garnishes, it’s as beautiful as it is delicious. This cocktail is simple to make yet sophisticated enough to impress guests.

Ingredients

• 60 ml (2 oz) gin
• 30 ml (1 oz) freshly squeezed lemon juice
• 15 ml (½ oz) simple syrup (adjust to taste)
• 4–6 fresh raspberries (plus extra for garnish)
• Soda water (to top up)
• Ice cubes

Instructions

Add raspberries and simple syrup to a shaker and muddle well.

Pour in the gin and lemon juice.

Add ice and shake until chilled.

Strain into a tall Collins glass filled with ice.

Top up with soda water and stir gently.

Garnish with raspberries and a lemon wheel.
