A rye sour with dark plum, lemon, cinnamon and a silky egg-white finish.

Description

Spiced Plum Sour uses rye whiskey because its peppery grain character can stand up to ripe plum and warm spice. Plum liqueur and a small amount of plum syrup layer fruit at two intensities while lemon keeps the drink lively.

Cinnamon is used sparingly and egg white smooths the edges. The result should taste like fresh dark fruit with spice behind it, not mulled syrup.

Ingredients

  • 45 ml Rye whiskey
  • 15 ml Plum Liqueur
  • 25 ml lemon juice
  • 8 ml Plum syrup
  • 5 ml Cinnamon syrup
  • 20 ml Egg White
  • 1 piece Lemon peel (for garnish)
  • Ice

Instructions

  1. Add rye, plum liqueur, lemon juice, plum syrup, cinnamon syrup and egg white to a shaker without ice.
  2. Dry shake for 10 seconds.
  3. Add ice and shake hard for 12 to 15 seconds.
  4. Double strain over a large cube in a rocks glass.
  5. Express lemon peel over the foam and garnish.
