Salted Honey Spritz

Description

Salted Honey Spritz uses salt the way a good kitchen does: not to make the drink salty, but to make honey taste deeper and citrus taste brighter. Gin gives a botanical spine, lemon supplies acidity and prosecco keeps the drink celebratory.

The salted honey syrup is deliberately modest. Soda stretches the sweetness and creates a clean, dry finish that works before food rather than after it.

Ingredients

  • 30 ml Gin
  • 15 ml lemon juice
  • 15 ml Salted honey syrup
  • Prosecco to top
  • Soda Water to top
  • 1 piece Lemon peel (for garnish)
  • 1 sprig Rosemary Sprig (optional garnish)
  • Ice

Instructions

  1. Fill a large wine glass with ice.
  2. Add gin, lemon juice and salted honey syrup and stir briefly.
  3. Add prosecco, then soda water.
  4. Lift once gently with a bar spoon to combine without losing the fizz.
  5. Express a lemon peel over the drink and garnish with the peel and optional rosemary.
