Description

Peach Burrata Bellini starts with the clean simplicity of peach and prosecco, then adds just 5 ml of fine-strained burrata whey. That tiny savoury dairy note makes ripe peach taste rounder and more aromatic without making the drink taste like cheese.

This is intentionally subtle. The whey should create texture and salinity at the edges while prosecco remains bright and dominant.

Ingredients

  • 25 ml Peach Puree (white peach if available)
  • 5 ml Burrata Whey (fine-strained and very cold)
  • Prosecco to top
  • 1 piece Peach Slice (for garnish)

Instructions

  1. Chill a flute or small wine glass.
  2. Stir the peach purée and cold burrata whey together until completely smooth.
  3. Spoon the mixture into the glass.
  4. Add prosecco slowly in two additions, stirring once very gently between additions to control the foam.
  5. Garnish with a thin peach slice and serve immediately.
