Description

The Limoncello Collins is what a Tom Collins might order on holiday. Gin gives it a botanical spine, limoncello adds rounded lemon sweetness, fresh lemon keeps the drink crisp, and soda stretches it into a long, refreshing highball.

It is a smart warm-weather drink because it feels generous without being heavy. The limoncello makes it softer than a classic Collins, but the gin and fresh lemon keep the finish clean. Serve it tall with plenty of ice and a lemon wheel.

Ingredients

  • 30 ml Gin
  • 30 ml Limoncello
  • 20 ml lemon juice
  • 10 ml Simple Syrup
  • 80 ml Soda Water

Instructions

Shake: Shake all ingredients except soda water with ice.

Strain: Strain into a Collins glass over fresh ice.

Top: Add soda water, stir gently, and serve.
