Description

Lemon Meringue Martini gets its dessert reference from technique as much as ingredients. Vanilla vodka and limoncello give sweet citrus, fresh lemon adds the sharp curd-like edge and vanilla syrup rounds the middle.

Egg white creates the meringue texture without adding dairy that could split against the citrus. The result is fluffy and dessert-like but still crisp enough to drink.

Ingredients

  • 40 ml Vanilla Vodka
  • 20 ml Limoncello
  • 20 ml lemon juice
  • 10 ml Vanilla syrup
  • 20 ml Egg White
  • 1 piece Lemon peel (for garnish)
  • Ice

Instructions

  1. Add vanilla vodka, limoncello, lemon juice, vanilla syrup and egg white to a shaker without ice.
  2. Dry shake hard for 10 to 15 seconds.
  3. Add ice and shake again until very cold.
  4. Double strain into a chilled coupe.
  5. Express lemon peel over the foam and garnish with fine zest or a small piece of meringue if available.
