Description

What it is: A lighter, sparkling Negroni relative in which sparkling wine replaces gin alongside Campari and sweet vermouth.

The story: The Sbagliato is associated with Mirko Stocchetto and Bar Basso in Milan in the 1970s. Its name means roughly ‘mistaken’ or ‘wrong’, reflecting the famous story that sparkling wine was used in place of gin. The exact retelling varies, but Bar Basso’s role in the drink is firmly established.

Why it works: Campari and vermouth retain the bitter-orange and herbal core of a Negroni, while sparkling wine makes it lighter, drier and more lifted. Add the bubbles last and stir only briefly.

Ingredients

  • 30 ml Sweet Vermouth
  • 30 ml Campari
  • Prosecco to top
  • 1 orange slice

Instructions

  1. Fill a chilled lowball glass with fresh ice.
  2. Pour in the sweet vermouth and Campari and stir briefly to chill.
  3. Top with 60 ml very cold Prosecco.
  4. Give the drink one gentle lift with a bar spoon, just enough to combine without losing bubbles.
  5. Garnish with a fresh orange wheel.
