A playful, tropical blue sipper that swims with beach-bar nostalgia. Coconut rum and pineapple meet curaçao and a touch of coconut cream. It nods to 1980s piña colada offshoots and blue lagoon favourites.
In a shaker with ice, combine coconut rum, pineapple juice, blue curaçao and cream of coconut. Shake until frothy. Strain into a hurricane or highball glass over ice. Garnish with a pineapple leaf or gummy fish.
