Vodka Sour

Description

What it is: A clean, bright sour of vodka, fresh lemon, rich sugar syrup, bitters and optional egg white.

The story: Unlike named classics with a single accepted creation story, the Vodka Sour is a direct application of the older sour template to vodka. That neutrality is its strength: lemon, bitters and texture become unusually clear because the base spirit contributes relatively little flavour.

Why it works: The drink should be tart but not punishing, with aromatic bitters providing spice and definition. Egg white softens the acidity and adds a smooth foam cap.

Ingredients

  • 60 ml Vodka
  • 30 ml lemon juice (freshly squeezed)
  • 15 ml Sugar syrup
  • 3 dashes Angostura Bitters
  • 2 drops 20% saline solution
  • 15 ml Egg White (optional for foam)
  • 1 piece Lemon peel
  • 1 piece Maraschino Cherry

Instructions

  1. Chill a lowball glass and prepare the lemon and cherry garnish.
  2. Add vodka, lemon juice, rich syrup, bitters, optional saline and optional egg white to a shaker with ice.
  3. Shake hard, then strain back into the shaker.
  4. Shake again without ice to tighten the foam.
  5. Fine strain over fresh ice in the lowball glass and garnish with lemon and a cherry.
