Description

What it is: Rich hot chocolate warmed with almond-scented amaretto and finished with a soft cap of cream.

The story: There is no single canonical inventor or historic specification for Amaretto Hot Chocolate, so this version is deliberately labelled as a Cocktail Fun house recipe rather than given a made-up origin story. Amaretto is an Italian-style sweet liqueur whose familiar almond-like flavour makes it a natural partner for cocoa.

Why it works: The drink should taste first of real chocolate, then toasted almond and vanilla-like sweetness. Adding the amaretto after the chocolate is hot, rather than boiling it with the milk, protects its aroma and keeps the alcohol from cooking away.

Ingredients

  • 200 ml Prepared hot chocolate (hot and steaming)
  • 35 ml Amaretto
  • 20 ml Double cream (lightly whipped)
  • Cocoa Powder

Instructions

  1. Warm a heatproof Irish Coffee glass with hot water, then empty and dry it.
  2. Prepare 200 ml of rich dark hot chocolate and heat until steaming, not boiling.
  3. Remove the hot chocolate from the heat and stir in 35 ml amaretto.
  4. Pour into the warmed glass, leaving a little room at the top.
  5. Float lightly whipped cream over the back of a spoon if using, then finish with a light dusting of cocoa powder.
