Description

The Raspberry Mojito takes everything people love about the traditional Mojito with muddled mint, lime, sugar, and rum and enhances it with the natural sweetness and tartness of fresh raspberries.

The result is a beautifully pink cocktail that’s as eye-catching as it is delicious. The combination of sweet fruit, sharp citrus, and cooling mint creates a balanced, crisp drink with a subtle fizz from soda water.

Ingredients

  • 60 ml White rum
  • 9 mint leafs
  • 7 pieces Raspberry (plus extra for garnish)
  • 2 teaspoons Sugar (or simple syrup)
  • 1 lime (cut into wedges)
  • Soda Water to top
  • Ice

Instructions

Muddle the base: In a tall glass, muddle the mint leaves, raspberries, lime wedges, and sugar together until the juices release and the sugar dissolves.

Add the rum: Pour in the white rum and stir to mix.

Fill with ice: Add plenty of crushed ice to the glass.

Top with fizz: Fill the rest of the glass with soda water, stirring gently to combine.

Garnish & serve: Garnish with extra raspberries, a lime wedge, and a sprig of mint. Serve with a straw.
