Raspberry Daiquiri

Description

What makes Raspberry Daiquiri worth making is the way its flavours move across the glass. The frozen texture softens the edges, so the drink needs enough citrus and lift to stop it tasting heavy. White rum, simple syrup and raspberries do that job well: fruit brings the holiday feeling, citrus keeps it awake and the spirit gives it a proper cocktail backbone.

Serve it very cold, but not rock-solid; the best version is thick enough to feel luxurious and loose enough to drink without fighting the glass.

Ingredients

  • 60 ml White rum
  • 30 ml lime juice
  • 15 ml Simple Syrup
  • 7 pieces Raspberry (plus extra for garnish)
  • Ice

Pour in the white rum and add a handful of ice cubes.

Shake vigorously until well chilled.
