Pisco Sour

Description

What makes Pisco Sour worth making is the way its flavours move across the glass. The sour structure gives the drink its discipline: spirit for weight, citrus for energy and sweetness for shape. Pisco, lime juice, simple syrup and egg white should feel bright and deliberate, with the tart edge making the flavour pop rather than vanish.

The best version tastes alive, not merely acidic; it should leave a clean finish and make the next sip feel inviting.

Ingredients

  • 60 ml Pisco
  • 30 ml lime juice
  • 15 ml Simple Syrup
  • 1 piece Egg White
  • 2 dashes Angostura Bitters (for topping)

Instructions

  1. Shake all ingredients except bitters without ice to emulsify the egg white.
  2. Add ice and shake again until well chilled.
  3. Strain into a coupe glass.
  4. Top with a few dashes of Angostura bitters.
